Cut off ends and slice in half. Scrape out seeds and watery part with a spoon. Chop into small pieces, add chopped tomatoes, chopped kalamata olives, crumled feta cheese, dry oregano, salt and pepper , for a wonderful Greek salad! Or start the same and add chopped pieces to another salad, to tuna fish for sandwhiches, etc. Another way is to stuff it. Start the same way and then stuff with a cooked mixture of hamburger, onions, garlic and cooked rice, seasoned with tomato sauce, salt and pepper. Enjoy!
