All hail the mighty kale!

Market Haul Week 3

Kale, one of the trendiest greens you’ll find in the market these days, is also one of the most forgiving (just try to overcook it — not possible!). This hardy winter green is king among dark, leafy veggies. From Dinosaur to Red Russian, each variety is a powerhouse of flavor and nutrition.

I know. I know. You may be thinking: why kale? It’s always in the spotlight. Well, there’s a reason for that. This superfood’s bold, rich flavor has a way of reinventing itself. Whether they’re shaved raw in a salad or slow-cooked with onions, you’ll find the preparations for these mighty greens are endless, and all delicious.

To ensure my dish is tender, I look for baby kale at the farmers market and always de-stem the leaf before cooking it. Do you have any tips for cooking kale? Share them with us below!

    Must be a Kathryn thing, but my first choice is kale chips. I wash small pieces, massage in rosemary and nutritional yeast, and then throw them into the dehydrator. Taste great and a LOT cheaper than buying them

    I stir fry my kale with olive oil, frozen carrots, and a little honey for a quick and easy meal. Happy Kale !

    I love tossing kale raw into smoothies--even the kids like them if there's enough fruit to keep the smoothie from being green-colored. 1/2 bunch kale, handful of frozen strawberries, 1 fresh or frozen banana, leftover veggies or baby food if around, chia seeds if I have them, a handful of walnuts or pecans, plain or vanilla yogurt, and either milk or fruit juice to desired thickness. Blend and drink.

    I make a soup called zuppa Tuscana with it. Easy way to eat your greens and it's really good.
