Market Haul: Baby Spinach

Spinach at the Greenmarket comes in bunches, as if it were just plucked out of the ground, or comes loose leaf in bins. I tend to gravitate toward the loose leaves since they’re a bit easier to work with, plus I’m likely to grab a few more varieties to make a mixed salad. A winter salad built on mixed greens is a favorite way to load up on the fiber, iron, and vitamins found in spinach. Another classic, simple preparation is to sauté with a bit of garlic and fresh lemon juice. Raw or cooked, simply prepared or as an add-on to another dish, spinach is one of the easiest ways to boost your nutrient intake without adding much sugar, salt, or fat.
